The PSX Culinary Corner - Recipes and Methods

Hi Leon here and I’m going to start of this thread with a simple recipe you can use when camping or at the beach or lake or just out on the road. Easy and enjoyable.

Baconized Ranchtastic Foil Packet Potatoes

3 sheets of heavy-duty foil
10-12 baby red potatoes, sliced
6 slices of cooked and crumbled bacon (Turkey or Canadian)
1 packet ranch dressing mix
Seas Salt and pepper to taste
3 tablespoons butter
Sour cream for serving Optional

  1. Spray each sheet of foil with cooking spray.
  2. Top each piece with equal portions of potatoes, bacon, and ranch dressing mix.
  3. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.
  4. Grill for 20 to 30 minutes. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

Perfect for an afternoon snack or early Dinner side dish when BBQ on a nice sunny afternoon.

Buttery good scrambled eggs:

Ingredients:
3 eggs, room temperature preferred
1.5 tablespoons of salted butter.

Equipment:
2 qt. saucepan, like this: Cuisinart 2qt saucepan
Silicone spatula

  1. Turn on stove to medium heat
  2. Crack eggs into saucepan, add butter
  3. Put saucepan on heat and start stirring.
  4. Keep stirring
  5. As the scrambled eggs start to form on the bottom, keep stirring.
  6. Take off the heat for a couple of seconds (like 10), stir, put back on the heat for a couple more seconds (like 10 more), stir.
  7. Repeat (6) until eggs are done and still slightly wet.
